HEALTH ALERT: Consumers’ Perception of Fibers

As consumers continue their search for the next hot healthy ingredient, fiber continues to top the charts. Food Product Design continues to dive into the topic of fiber [check out our Fiber Content Library], as it proves time and time again to be a staple in what consumers consider a healthy diet.

According to new research from BENEO, a manufacturer of functional ingredients, consumers have a high level of awareness of fiber as an important ingredient for a healthy and balanced diet. The new research, produced by Health Focus International, quantified insights that directly link to today’s consumer focus on eating healthier foods made with natural and non-genetically modified organism (GMO) ingredients. An overwhelming 93 percent of the 1,000 consumers interviewed said fiber is good for their overall health. Consumers are also aware that fibers contribute to a healthy gut and weight management, with 91 percent responding that fiber is beneficial for their intestinal health and 68 percent saying fiber helps them feel fuller longer. Moreover, 63 percent maintain that fiber helps them eat less during the day.

From breakfast cereals and bars to fiber-rich snacks and baked goods, food with fiber are a draw for consumers. More than 60 percent of the respondents said breakfast cereals, cereal bars, bread and yogurt are most suitable to provide digestive health benefits. In terms of claims, 67 percent found “high in natural fiber" as a very appealing fiber claim for food and beverage products. The survey results show a clear preference for natural products—47 percent of respondents are actively seeking natural fibers and 45 percent consider non-GMO products as “better."
What’s interesting, however, is consumers are differentiating among fibers. In terms of product designation, 62 percent of respondents prefer chicory root fiber as the most natural soluble fiber. In contrast, only 42 percent and 3 percent of consumers, respectively, perceive soluble corn fiber and polydextrose as natural fibers. Interestingly, the research results mirror actual ingredient production methods. Unlike other fibers—for example soluble corn fiber and polydextrose that are artificially or chemically made—chicory root fiber is naturally sourced and produced by a gentle hot water-extraction method. Additionally, chicory root scores best, with 57 percent of the respondents not linking chicory root fiber to GMO. (Chicory root fiber is non-GMO and a natural source of dietary fiber. It can also be found in artichokes and onions.)

As Judie Bizzozero pointed out in her blog, 10 Food, Nutrition & Health Trends for 2015, sugar is a top 10 trend in food, nutrition and health for 2015. According to the “10 Key Trends in Food, Nutrition, and Health 2015" report from New Nutrition Business, sugar replaces fat and salt as the new dietary demon. The spotlight on sugar content has created a challenge for food companies that are wrestling with how to meet expectations of lower sugar and boost business.

BENEO’s research seconds this; its results show consumers are particularly concerned about the sugar content in food and drinks, with 63 percent of respondents indicating they try to avoid or limit sugar; only artificial sweeteners are avoided even more. This goes hand-in-hand with the fact that consumers look for the calorie, fat and sugar content of a product before purchasing it (69 percent, 65 percent and 62 percent, respectively).

“These results clearly show that consumers are actively looking for natural functionality in their daily diets," said Joseph O’Neill, president and general manager of BENEO, Inc.

A recent study took a look at the short-term effectiveness of a fiber-based dietary ingredient, and found the ingredient could aid in weight management for its ability to make people feel less hungry and consume less food.
Hunger is a major barrier to successful weight control and consumers need healthy foods that will help them control their appetite. Fibers have the potential to modulate appetite without adding additional calories, and can be added to a variety of food and beverage applications. Unfortunately, the average American consumes half of the recommended amount of fiber, making fiber fortification an important product-development strategy for food and beverage products. Psychologists from the University of Liverpool’s Institute of Psychology, Health and Society tested whether a new ingredient (Weightain®satiety ingredient)—consisting of a combination of dietary fiber sources including a viscous hydrocolloid and a whole-grain corn flour rich in resistant starch—made people feel fuller for longer and influenced the amount of food they ate.

In the study, 90 normal-to-overweight participants were given a fruit-based smoothie for breakfast containing a dose of either 20 g or 30 g of the satiety ingredient or a non-active control. Researchers then measured their intake of food at both lunch and dinner on that day and examined their levels of hunger.

Those who consumed the satiety ingredient at breakfast ate less at both lunch and dinner, compared to the control. Overall, participants who consumed 20 g ate 4 percent fewer calories, whereas those who consumed the 30-gram dose ate 5 percent less food at both lunch and dinner combined.

Lower hunger levels after breakfast were recorded for both doses and the 30-gram dose produced lower hunger levels after lunch.

Psychologist Jo Harrold, Ph.D, from the University’s Human Ingestive Behaviour Laboratory in the Institute of Psychology, Health and Society, noted, “Whilst more research is needed to measure these effects of the product over longer periods of time and in people who are actively trying to lose weight, this study demonstrates high fiber food products which make you feel fuller could provide a potential solution to weight management."

The functional and nutritional beverage market continues to be a hot growth category.

Consumers continue to seek healthy beverage options with high protein, ramped-up fiber, omega-3 fortification and more. These products meet consumer needs for portability and convenience with a wide range of flavors and textures to promote repeat purchase and minimize burnout.

Functional and nutritional beverages are a great category for healthy products to thrive. Ingredient suppliers continue to make great progress in managing the solubility, gelation properties, pH tolerance and other functional properties to drive this category’s growth.

EATING RICE BOOSTS DIET QUALITY, REDUCES BODY WEIGHT

Researchers analyzed the National Health and Nutrition Examination Survey (NHANES) datasets from 2005-2010 and evaluated the association of rice consumption with overall diet quality and key nutrient intakes in a nationally representative sample of 14,386 U.S. adults.

"Our results show that adults who eat rice had diets more consistent with what is recommended in the U.S. Dietary Guidelines, and they showed higher amounts of potassium, magnesium, iron, folate and fiber while eating less saturated fat and added sugars," said lead author Theresa Nicklas of Baylor College of Medicine. "Eating rice is also associated with eating more servings of fruit, vegetables, meat and beans," she added.

Americans enjoy some 27 pounds of enriched white and brown rice per person per year with the majority (70%) of rice consumption coming from enriched white rice. Americans eat a variety of grain-based foods, but rice stands out because it is eaten primarily as an intact grain that is naturally sodium free and has only a trace amount of fat, with no saturated fat. Consumers can control adding fat, salt and flavors at their discretion.

This research builds on two previously published studies that showed the positive contribution of rice to diet quality. A 2009 observational study using NHANES datasets and Continuing Survey of Food Intakes by Individuals (CSFII), found that rice eaters consumed significantly less fat and saturated fat and consumed more iron, potassium, fiber, meat, vegetables and grains. A follow-up study in 2010, also using NHANES datasets, included children in the study group and further confirmed that rice consumption was associated with greater intake of a range of healthier foods and nutrients.

Brown rice and other whole grains—whether familiar whole wheat or so-called ancient grains, such as quinoa, amaranth and spelt—are becoming a popular way to add health and appeal to everything from bread to breakfast cereal to soup, and can even create some gluten-free products.
